Update #2: I've just found out that I don't even need to use rsync. The Jungledisk binary will run schedules backups just like the desktop version - you just have to set up the config xml file right. This means you get all the nice Jungledisk features for automated backups, like and RSS feed of the reports for one thing.

Just an update on this as of Jungle Disk 2.6:

I have a Debian 5.0 server and all I needed to do was to create my jungledisk-settings.xml file, apt-get install fuse-utils, then run the jungledisk Linux binary. I didn't need to compile or install anything else, nor did I need to manually mount the bucket - the jungledisk binary did all that for me. I'm now using rsync (with the --inplace switch) to do my backups. So far it works fine. I need to set jungledisk to run at boot time (as my non-privilaged user) though.

Not sure about how I'd restore previous versions though - might have to do that manually.

This idea of mounting my S3 bucket as local disk drive and then use rsync will not work well.
It will not provide any bandwidth efficient algorithm and upload the whole new file, not just what was changed.
Only when you connect to Rsync service on the remote side (For example http://www.s3rsync.com in Ec2 servers at Amazon), you can fully benefit form Rsync power.
Rsync to "local" drive is a bad idea since it uploads the whole file, as mentioned above the backup process is much more slower.
